천연물질을 이용한 사과 갈변저해 연구로 생과소비 다양성 제시

(전국= KTN) 김도형 기자= 제41회 한국식품저장유통학회 국제학술대회에서 경상남도농업기술원 사과이용연구소 김윤숙 연구사가 포스터 발표부분 ‘우수상’을 수상해 기관의 위상을 높였다.

이번 국제학술대회는 “New Challenges in Smart Food-Tech”라는 주제로 약700여 명의 회원과 관계자들이 참석하여 9개 세션 총 33명의 국내외 초정 연사의 학술강연과 포스터 338편이 발표 되었으며, 농업기술원에서는 5건을 발표했다.

김윤숙 연구사가 수상한 발표 내용은 ‘천연 갈변억제제를 처리한 신선편이(Fresh-cut)사과의 품질변화’이다. 1인 가구와 맞벌이 가구 증가 등으로 간편하게 섭취할 수 있는 신선편이 가공품에 대한 수요가 증가하면서 천연물질을 이용하여 사과의 갈변 저해효과와 갈변이 적은 품종을 제시해 생과소비를 늘릴 수 있는 방안을 제시함으로써 연구 성과를 인정받아 좋은 평가를 받았다.

Under the theme "New Challenges in Smart Food-Tech," about 700 members and officials attended the international conference, presenting academic lectures and posters of a total of 33 first-time speakers from home and abroad in nine sessions, and five from the Korea Advanced Institute of Agriculture and Technology.

The award-winning presentation by researcher Kim Yoon-sook is "a change in the quality of fresh-cut apples that handled natural browning inhibitors." As the demand for fresh convenience products, which can be easily consumed due to the increase in single-person households and double-income households, increased demand for processed products, it was well received for its research results by suggesting measures to reduce the browning effect of apples and increase the cost of raw fruit by presenting varieties with less browning using natural materials.

김윤숙 연구사는 “사과생산량은 늘고 있고 가공품의 80% 이상을 차지하는 사과즙의 소비량은 감소하고 있어 사과 소비를 늘릴 수 있는 방안으로 현장에서 활용 가능한 연구가 되도록 노력하여 농가의 소득증대에 기여토록 하겠다”라고 포부를 밝혔다.

"As apple production is on the rise and consumption of apple juice, which accounts for more than 80 percent of processed goods, is on the decline, we will try to make it a research that can be used in the field as a way to increase apple consumption to contribute to the income growth of farmers," said Kim Yoon-sook, a researcher at the institute.

한편 한국식품저장유통학회는 대학, 연구기관 관계자 등 1,500여명의 회원을 보유한 농식품분야 전문학회로 매년 대규모 국제학술대회를 개최하고 있으며, 올해는 8월 19일부터 3일간 여수에서 철저한 사전 예방과 현장에서 예방수칙을 준수하여 개최됐다.
