[한국유통신문=김도형 기자] 한국의 대표 발효음식인 김치가 네덜란드의 세계적인 호스피탈리티 교육기관 정규수업에서 ‘재생 미식’의 주요 사례로 소개됐다.


주네덜란드대한민국대사관과 한식진흥원은 재외공관 한식경연대회 연계 프로그램의 하나로 지난 25일 네덜란드 호텔스쿨 더 헤이그(Hotelschool The Hague)에서 김치 교육을 진행했다.


이번 교육에는 호텔스쿨 더 헤이그 학생 56명이 참여했다. 학생들은 김치를 계절성과 지역성, 발효의 관점에서 이해하고 네덜란드 현지 식재료에 직접 적용해보는 시간을 가졌다.


호텔스쿨 더 헤이그는 2026년 QS 세계대학평가 전공별 순위 호텔·레저경영 분야에서 세계 7위이자 네덜란드 1위에 오른 유럽의 대표적인 호스피탈리티 교육기관이다.

기조강연과 현지 제철 채소 활용 워크숍 통해 한국 발효문화의 확장 가능성 제시


이번 프로그램은 세계적인 호텔학교의 정규 교육과정에서 김치를 중심으로 한국의 발효문화와 지속 가능한 식문화를 다뤘다는 점에서 의미가 크다.


지속 가능한 미래 식문화로 주목받은 김치


교육은 호텔스쿨 더 헤이그의 정규과목인 ‘재생 미식(Regenerative Gastronomy)’ 수업의 하나로 마련됐다.


유럽 미식 교육계에서 주목받는 재생 미식은 음식을 단순한 조리 결과물로만 보지 않고 생산과 유통, 소비에 이르는 전체 과정에서 이해하는 접근법이다. 식재료의 지역성과 계절성은 물론 환경과 공동체, 문화적 맥락까지 함께 고려한다.


이 같은 관점에서 김치는 제철 채소의 보존과 발효, 지역별 식재료의 활용, 공동체적 음식문화가 결합된 대표적인 재생 미식 사례로 소개됐다.


기조강연과 김치 워크숍은 김태연 김치한식문화교육원 대표가 맡았다. 세계김치연구소 글로벌 김치 앰배서더로도 활동하는 김 대표는 김치를 계절성과 지역성, 발효의 관점에서 설명하며 한식이 현대 미식문화 속에서 확장될 수 있는 가능성을 제시했다.


강연에서는 김치가 겨울철 채소를 오랫동안 보관하기 위한 저장 방식에서 출발해 계절과 지역, 식재료에 따라 다양하게 변화하는 한국의 대표 발효음식으로 발전한 과정을 다뤘다.


네덜란드 제철 채소로 김치 직접 담가


강연에 이어 학생들은 네덜란드에서 생산된 제철 채소를 활용해 직접 김치를 담갔다. 채소 절임과 양념, 발효로 이어지는 김치의 기본 원리를 배우고, 한국의 발효 방식을 현지 식재료에 적용하는 과정을 체험했다.


전통적인 김치 조리법을 일방적으로 전달하는 데 그치지 않고 현지 농산물과 식문화에 맞게 응용하도록 구성했다는 점도 주목된다. 이를 통해 김치가 특정한 재료와 지역에 한정되지 않고 세계 각지의 식재료와 결합할 수 있는 확장성을 보여줬다.


오는 10월에는 한국의 전통 장을 주제로 후속 프로그램이 진행될 예정이다. 한국 장류의 발효 원리와 풍미, 활용 방법을 소개하고 학생들이 된장과 간장, 고추장 등 한국 발효식품을 현대 요리에 응용할 수 있도록 지원할 계획이다.


주네덜란드대한민국대사관은 “한식은 이제 단순한 음식 소개를 넘어 현지 교육기관과의 협력을 통해 미래 식문화와 미식 교육의 영역으로 확장되고 있다”며 “김치를 매개로 한국 음식문화의 깊이와 다양성을 네덜란드의 젊은 호스피탈리티 인재들과 나눌 수 있어 뜻깊다”고 밝혔다.


김태연 대표는 “이번 프로그램은 김치가 세계적인 호스피탈리티 교육기관의 정규과정에서 재생 미식의 사례로 다뤄졌다는 점에서 의미가 있다”고 말했다.


이어 “미래 호스피탈리티 산업을 이끌 학생들이 김치를 발효와 지역성, 지속 가능한 식문화의 관점에서 이해하는 계기가 되길 바란다”고 밝혔다.


이번 교육은 한식을 완성된 음식으로 소개하는 기존의 홍보 방식을 넘어 발효 원리와 문화적 배경, 지속 가능성까지 교육한다는 점에서 의미가 있다. 세계 호스피탈리티 산업을 이끌 미래 인재들이 김치를 직접 배우고 활용하면서 한식의 국제적 인지도와 현장 적용 가능성도 한층 넓어질 것으로 기대된다.

Korean Embassy and Korean Food Promotion Institute introduce kimchi to 56 future hospitality professionals

Keynote lecture and hands-on workshop highlight Korean fermentation culture and its potential in modern gastronomy


THE HAGUE, Netherlands — Kimchi, Korea’s signature fermented food, has been introduced as a case study in regenerative gastronomy during a regular class at Hotelschool The Hague, one of the world’s leading hospitality education institutions.


The Embassy of the Republic of Korea in the Netherlands and the Korean Food Promotion Institute organized the educational program on August 25 as part of an initiative linked to Korean food competitions hosted by overseas diplomatic missions.


A total of 56 Hotelschool The Hague students participated in the program. They explored kimchi through the principles of seasonality, locality and fermentation before applying those concepts to seasonal ingredients grown in the Netherlands.


Hotelschool The Hague ranked seventh worldwide and first in the Netherlands in the hospitality and leisure management category of the 2026 QS World University Rankings by Subject.


The program was particularly significant because Korean fermentation culture and sustainable food practices were presented through kimchi as part of the regular curriculum at an internationally recognized hospitality school.


Kimchi Presented as a Model for Regenerative Gastronomy


The session formed part of Hotelschool The Hague’s Regenerative Gastronomy course.


Regenerative gastronomy, an emerging field in European culinary education, examines food within the broader systems of production, distribution and consumption. It considers not only how a dish is prepared but also the locality and seasonality of ingredients, environmental impact, communities and cultural context.


From this perspective, kimchi was presented as an important example of regenerative gastronomy that combines seasonal food preservation, fermentation, local ingredients and community-based culinary traditions.


The keynote lecture and kimchi workshop were led by Taeyeon Kim, director of The Kimchi Institute and a Global Kimchi Ambassador for the World Institute of Kimchi.


Kim introduced kimchi through the interconnected themes of seasonality, locality and fermentation. She also discussed how Korean cuisine can be adapted and further developed within contemporary global gastronomy.


The lecture examined kimchi’s origins as a method of preserving vegetables during winter and traced its development into Korea’s representative fermented food, with varieties shaped by different seasons, regions and locally available ingredients.


Students Make Kimchi with Seasonal Dutch Vegetables


Following the lecture, students made kimchi using seasonal vegetables from the Netherlands. They learned the basic process of salting vegetables, adding seasoning and allowing fermentation to take place.


Rather than simply reproducing a traditional Korean recipe, the workshop encouraged students to apply Korean fermentation principles to local ingredients and food culture. This approach demonstrated that kimchi is not limited to a fixed set of ingredients but can be adapted to agricultural products and culinary environments in different parts of the world.


A follow-up program focusing on Korea’s traditional fermented sauces and pastes is scheduled for October. It will introduce the flavors, fermentation principles and culinary applications of products such as doenjang, soy sauce and gochujang, helping students explore their use in contemporary cuisine.


“Korean cuisine is moving beyond the simple presentation of individual dishes and expanding into the fields of future food culture and culinary education through partnerships with local institutions,” the Embassy of the Republic of Korea in the Netherlands said.


“It is particularly meaningful to share the depth and diversity of Korean food culture with young hospitality professionals in the Netherlands through kimchi,” the embassy added.


“This program is significant because kimchi was presented as an example of regenerative gastronomy within the regular curriculum of a world-leading hospitality education institution,” Kim said.


“I hope it gives future hospitality professionals an opportunity to understand kimchi through the perspectives of fermentation, locality and sustainable food culture.”


The program marked a shift from simply promoting Korean dishes to educating participants about fermentation principles, cultural context and sustainability. By giving future hospitality professionals the opportunity to make and interpret kimchi themselves, the initiative is expected to broaden the international understanding and practical application of Korean cuisine.
